Barbecued Fish

A really simple recipe for everyone who loves fish and wants it to be as delicious and healthy as possible.

Ingredients

  • 6 Medium sized fish (Seabream, Sea Bass)
  • ------------------------
  • Garlic & parsley fish stuffing:
  • 1 Large bunch of flat leaf parsley
  • 6 cm Cloves of garlic
  • 2 tsp Black pepper
  • 1 tbsp Sea salt

Method

  1. It’s really simple, just finely chop the parsley and onion and combine with the seasoning – your stuffing is ready.
  2. Once you have your fish cleaned sprinkle with sea salt and leave for about 1 hour.
  3. Cut slanted gashes into the fish approximately every 3cm on both sides and fill with the garlic and parsley mix as per the recipe above.
  4. While the barbecue is heating up, make a lemon and olive oil dressing to baste the fish with as they are cooking. Any leftover dressing can be poured over the fish when they’re ready to serve.
  5. For the lemon and oil dressing you need approximately half a cup of olive oil and the juice of the 3 lemons whisked together.
